Freshly made noodles

In this photo from Kashgar, Xinjiang, in 2000, a man sells freshly made Lagman noodles. A type of pulled noodle (ๆ‹‰้ข lฤ miร n), they are usually served with meat, vegetables, spices, and oil. Other popular Xinjiang dishes include โ€œbig plate chickenโ€ (ๅคง็›˜้ธก dร pรกnjฤซ), pilaf (ๆŠ“้ฅญ zhuฤfร n), lamb kebabs (็ƒค็พŠ่‚‰ kวŽoyรกngrรฒu), and Uyghur fruit and nut candy (้บป็ณ– mรกtรกng).
