Hand-pulled noodles in Xinjiang
In this photo taken in 2002, a cook makes hand-pulled noodles in Kashgar, Xinjiang. They are used for a dish called ban mian (拌面 bàn miàn) in Chinese, in which a mix of cooked meat, vegetables, and a sauce are usually poured over a bowl of noodles.
