Chili peppers in the sun
A laborer spreads freshly harvested red peppers to dry in the sun in the shadow of the Great Wall in Inner Mongolia, near the border with Ningxia Province. While the use of hot peppers in Chinese food is most often associated with the cuisine of the southwestern Sichuan Province, they are a popular ingredient in the cooking of northern and western regions as well.
